These are downright addicting!!! All natural ingredients. A good balance of protein, carbs and fat. Contains superfoods, antioxidants, and phytonutrients from the Shakeology. Great for an afternoon snack, a treat after supper, a weekend roadtrip, your kids’ lunchbox, or whenever you have a craving for sweets! Just remember they are healthy for you but they are still 110 calories per cookie so limit yourself to one for a treat – and two or three for an afternoon meal/snack. And these can be whipped up in 5 mins or so! I like to keep them in the fridge so they’re a bit more rigid and out of arms reach so I’m not tempted by them sitting on the counter. Recipe make 24 cookies.
- 1 scoop chocolate Shakeology
- 1 cup all-natural peanut butter (or almond butter)
- 1 cup rolled oats
- 1/2 cup honey
- 1 tsp vanilla extract
- coconut flakes (to roll in, if desired)
- Combine all ingredients in a large bowl. Mix well with a rubber spatula or clean hands. Roll mixture into 24 balls, each about 1 inch in size. Roll in coconut flakes and flatten each slightly with a fork. Enjoy!
