I am such a sucker for these gooey chocolatey cookies! So if I’m gonna make them, they might as well be the healthy version instead of using all that butter and sugar, right?

I made these yesterday and let me tell you these rich, creamy, chocolate cookies will not disappoint! But remember, I didn’t say they were low calorie so while they use healthier ingredients than traditional recipes, be careful not to eat half the batch right after you make them lol. Put them in a container in the fridge and limit yourself to one or two a day as an afternoon or evening snack/splurge.

No Bake Cookies

So here it is, a healthy version of a really bad dessert:


– 1 cup natural peanut butter or almond butter
– 3/4 cup honey
– 1/4 cup coconut oil
– 2 teaspoons vanilla
– 2 1/2 cups quick oats
– 6 tablespoons cocoa powder

Combine first three ingredients in a sauce pan and warm gently on stove top. If you’re using raw honey, you’ll want to be careful to warm it only until the coconut oil melts and the peanut butter softens. No reason to heat the life out of your honey!

Next, add in the vanilla, oatmeal, and cocoa, and stir well.

Drop by the spoonful onto a saran lined plate and let cool. Store in an airtight container in the refrigerator – if they last that long.

    These are amazing! I love them! For those watching calories they are about 150-200 calories a peice but so much better for you than other desserts. I like these a lot more than the traditional cookies.

    Hmm, not sure what I did wrong, but there didn’t seem to be enough liquid in the end. Like it made a big ball and did not have the nice shiny outside like yours do in the picture. Oh well, hopefully still tastes good.

    Yum O. These are really good. I only used 2 cups of oats and a little less honey. This recipe is definitely a keeper.
