We were in Costco last weekend and they were sampling this chocolate caramel popcorn and it was amazing!  Then I looked at the calorie information…..Yikes!!!!  The small bag had enough calories to last me two days of my normal calorie intake.  So I thought, “I must be able to make a healthy version of this!”   Annnnnnnnnnd here you go!!

Popcorn drizzled with chocolate seems way too decadent for a healthy snack.  But when popcorn is made with coconut oil, cocoa powder, and just a little honey, the final result has nothing but wholesome ingredients. And if all that isn’t enough to satisfy your chocolate craving, you can still finish it off with a touch of melted chocolate.

Healthy Chocolate-Covered Popcorn

Serves 2

Ingredients:

2 Tbsp. unpopped popcorn

1 Tbsp. coconut oil

1 Tbsp. cocoa powder

1 Tbsp. honey

1 Tbsp. dark chocolate (optional but highly recommended)

Instructions:

1. Pop the popcorn via a popcorn maker, or whatever method you prefer.

3. Melt the cocoa powder, honey, dark chocolate, and coconut oil in a bowl.

4. Pour the chocolate mixture over the popcorn, and toss to coat. Set in the fridge to harden.
