If you’re still buying salad dressing from the store…. STOP! Make your own! Here’s a super easy dressing I’ve been making lately from the 21 Day Fix Eating Plan:
Coconut Balsamic Vinaigrette
6 Tbsp coconut balsamic vinegar
6 Tbsp extra-virgin olive oil
1/4 cup lemon juice
1 tsp honey
2 tsp mustard
I combine all ingredients in a shaker cup or tupperware container that you can easily shake before use without it spilling all over the place. Just shake right before you use.
Makes 8 servings (2 Tbsp per serving)
P.S. You can make any flavor you want by using a different flavored balsamic vinegar. You can get tons of flavors: banana nut, peach, pear, strawberry, pineapple, apricot, apple, walnut, chocolate, …the list goes on.
