This recipe was given to me by a friend and has been sitting around for months.  Well, the other day I thought I would try it out and WOWY!!!  These soft gooey bars were like heaven to my tastebuds Рmaybe I was just really hungry but these are in my top 3 for best tasting (and healthy) snack bars!

Chocolate Coconut Quinoa Protein Bars


  • 2 cups cooked quinoa
  • 1/2 cup peanut butter or almond butter
  • 3 tbsp honey
  • 1/4 tsp sea salt (optional)
  • 3/4 cup rolled oats
  • 1 banana, mashed
  • 1 egg
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chocolate chips


  • Mix first 4 ingredients together in a large bowl
  • Add next 5 ingredients and mix well
  • Pour and spread mixture into a pan lined with parchment paper
  • Bake at 350 degrees F for 25 mins
  • Let cool for 5-10 mins and try to save some for tomorrow haha

    Do you have nutrition/calorie info on this recipe?

      Hey Vivian! Unfortunatley I don’t. This recipe was just given to me on a scratch piece of paper by a friend. But you could easily just add all the nutrition info up for each ingredient and divide it by the # of pieces you cut it into.
