We made these the other night (to pair with a veggie burger) and they were fantastic!   No oil and no deep fryer needed here! Give these a try as a nutritious and super tasty alternative to good old french fries.  Depending on the size of the zucchini you may need to use more eggs.

Zucchini Fries

Ingredients:
– 2 zucchinis, quartered and cut lengthwise in thirds
– 3/4 cup wholemeal breadcrumbs (seasoned to taste with garlic powder, salt, pepper, paprika       and basil)
– 1 egg (can add egg white if desired)
– 1/4 cup shredded Parmesan (we used even less than this)

Instructions:
Preheat oven to 200C / 400F. Spray two baking sheets with non-stick spray, or brush them lightly with olive oil.

Place the breadcrumbs in a dish, and season to taste with garlic powder, salt, pepper, paprika and basil (be generous, since this is the zucchini’s main source of flavoring). Mix in the parmesan. In a separate bowl, whisk the egg and set aside.

Dip each zucchini slice in the egg, shaking off any excess, then roll in the breadcrumb mixture to coat all over. Place on the baking sheet and repeat.

Bake for 20-25 minutes, turning once halfway through, until golden brown and crunchy on both sides. Serve with warm Napoli/marinara sauce or sweet chilli for dipping. Best eaten when hot, but can be prepared in advance and re-crisped in a 200C / 400F oven for 5-6 minutes.
