I’m doing my monthly 3 Day Refresh and I love the recipes from this program! Here’s what I had tonight:
Cucumber & Tomato Salad
– 2 tsp apple cider vinegar
– 1 tsp balsamic vinegar
– 2 tsp lemon juice
– 1 tsp extra-virgin olive oil
– 1/2 of a medium cucumber, halved lengthwise, sliced
– 1/2 cup cherry tomatoes, halved
– 1 tbsp chopped red onion
– 1 tbsp chopped fresh parsley
– 1 tbsp chopped fresh basil leaves
– 1 dash Himalayan salt
Combine all ingredients in a large bowl and mix well. Then eat!
This program always makes me realize how much I overeat on a daily basis! I’m not really hungry at all during the 3 days because I’m still satisfying my hunger – just with the right foods!
