Banana Apple Muffins

Muffins are sometimes the hardest thing to resist when you are in line at the coffee shop, or walk by them in the grocery store.   They just look so darn good!!  But they are one of the worst foods for fat and calories so be careful, even when they say low-fat!  These healthy Apple Banana muffins are a much better choice and taste pretty close to a regular old not-so-great muffin, without all the fat and calories!   So if you’re craving muffins….eat this!!

Banana Apple Muffins



  • 2 large eggs, lightly beaten
  • 2 medium bananas
  • 1/2 cup chopped apple
  • 1 tbsp butter or margarine
  • 1.5 cups whole wheat flour
  • 3/4 tsp baking soda
  • 1 dash sea salt


  • Preheat oven to 350 degrees F
  • Prepare 9 muffin cups by lining with muffin tin liners or coating with spray
  • Combine eggs, banana and butter in a medium bowl; mix well
  • Add flour, baking soda and salt to the bowl and mix until blended
  • Add apple; mix until just blended
  • Divide batter evenly between prepared muffin cups
  • Bake 16-18 mins, or until golden brown and toothpick inserted into the center comes out clean
  • Transfer muffins to rack; cool


  • To make gluten-free, use almond flour and gluten-free baking soda
