Banana Oat Pancakes

Who doesn’t like pancakes?  Well I certainly do and the first time I bit into these I was hooked!  They’re healthy and taste amazing!  Enough said!

Banana Oat Pancakes

 

Makes 6 pancakes

 

Ingredients:

  • 1 cup unsweetened almond milk
  • 2 large eggs
  • 1 large ripe banana
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 2 cups rolled oats
  • 1/2 tsp extra-virgin coconut oil

Instructions:

  • Place all ingredients in a large bowl and mix by hand
  • Heat a non-stick skillet/pan over medium heat (spray with olive/coconut oil if desired to prevent sticking)
  • Pour 1/4 cup batter onto the skillet/pan and cook for 2-3 mins or until bubbles form around the edges of the pancake.  Flip with spatula and cook for an additional 90 seconds.
  • Continue with remaining batter
  • Serve with no sugar syrup if desired
