Easy Pizza

This pizza is healthy, low in carbs, and SO easy to make!  And it tastes AMAZING!  You no longer need to fear eating pizza!  Go ahead and indulge because it’s healthy!

Easy Pizza

Ingredients:

  • 1 large whole wheat tortilla (sprouted grain or flour)
  • 1/4 cup tomato/pizza sauce
  • 1/4 cup sliced mushrooms
  • 1/4 cup chopped broccoli
  • 1/4 cup sliced red bell peppers
  • 1/4 cup sliced pineapple
  • 1/4 cup shredded low fat mozzarella cheese
  • 1 chicken breast, sliced (~ 100 g)

Directions:

  • Preheat oven to 425 F
  • Place tortilla on a baking sheet and spread with pizza sauce
  • Add the toppings
  • Add the cheese last
  • Bake for 8-10 mins, or until cheese is bubbly
  • Serve immediately (to yourself or others depending on how generous you feel)

Notes:

  • The toppings listed are my favorites but go ahead and substitute or add your favorite vegetable toppings.  Some ideas include baby spinach, sliced zucchini, asparagus, chopped red onions, grilled chopped eggplant, tomato, garlic, etc
  • Chicken could be substituted for lean ground turkey or bison, cooked shrimp or other low fat protein options, but keep it healthy.  Stay away from high fat, high calories toppings such as bacon, ham, pepperoni, sausage, etc
